Toasting the dry millet first adds a warmer nutty flavour before it is simmered in stock.

1 cup SpiceBloom Organic Hulled Millet

2 cups vegetable or chicken stock

→ A pinch of salt

→ Juice of ½ lemon

→ Fresh chopped parsley, coriander or mint

→ Olive oil to finish, optional

Rinse the millet and drain well. Place it in a dry saucepan over medium heat and stir for 3–4 minutes, until lightly toasted and aromatic. Carefully add the stock and salt, bring to a boil, then reduce the heat to low. Cover and simmer for approximately 15 minutes, or until the liquid has been absorbed. Remove from the heat, leave covered for 5 minutes, then fluff with a fork and stir through the lemon juice and herbs.
