Textured Vegetable Protein, commonly called TVP or soy mince, is made from 100% dehulled soybeans formed into light, free-flowing flakes. Once rehydrated, it develops a tender mince-like texture that works well in a wide variety of savoury meals.

Its neutral flavour makes it a practical base for tomato sauces, broths, marinades and spice blends. According to the product’s nutrition information, dry TVP provides 50g of protein and 16g of dietary fibre per 100g.

1 tablespoon soy sauce

1 tablespoon olive oil

→ Warm tortillas, salsa and avocado for serving

Pour the hot stock over the TVP and leave for 5–10 minutes, or until the liquid is absorbed. Heat the olive oil in a frying pan, add the rehydrated TVP, chipotle powder and soy sauce, then cook for 5–7 minutes until hot and lightly browned. Serve in warm tortillas with salsa and avocado.
